salmon, avocado on cucumber


Recipe from the Australian Women’s Weekly Cook

Process 250g cream cheese with an avocado, lemon juice, salt/pepper/sugar to taste. Can also add sambal oelek. Pipe or spoon onto slices of cucumber; top with smoked salmon rosettes and green onion slices.

Careful – the cucumber may release liquid if left out too long, which is unattractive and makes the cucumber soggy 😦

To make about this many (or maybe 10 more), I used:
3 cucumbers
1/2 lemon
1 avocado
1 packet of smoked salmon (100g?)
