Feta and spinach pasta salad

penne pasta
frozen spinach or fresh baby spinach
feta cheese
cherry tomatoes, halved
fresh basil, roughly shredded
olive oil

  1. Cook the pasta; drain; drizzle with olive oil.
  2. Wash and blanch the spinach; squeeze out excess water; chop roughly.
  3. Crumble feta over pasta.
  4. Toss with spinach, tomatoes, basil.
  5. Season with salt and pepper.

Enjoy warm or cold.

You can also throw in some garlic mushrooms for good measure 🙂
