frozen spinach or fresh baby spinach
cherry tomatoes, halved
fresh basil, roughly shredded
- Cook the pasta; drain; drizzle with olive oil.
- Wash and blanch the spinach; squeeze out excess water; chop roughly.
- Crumble feta over pasta.
- Toss with spinach, tomatoes, basil.
- Season with salt and pepper.
Enjoy warm or cold.
You can also throw in some garlic mushrooms for good measure 🙂
