chocolate soufflé

Yield
Two soufflés

100g chocolate
25g butter
1/2T plain flour
1 egg yolk
2 egg whites
22.5g caster sugar

  1. Preheat to 200°C
  2. Grease dishes; sprinkle with caster sugar
  3. Melt chocolate in double-boiler
  4. Melt butter in saucepan
  5. Add flour
  6. Cook and stir until mixture thickens and bubbles
  7. Remove from heat
  8. Stir in chocolate and egg yolk
  9. Beat egg whites and caster sugar
  10. Fold egg white into chocolate mixture – 1/4 first, then remaining 3/4
  11. Fill dishes
  12. Bake for 15 minutes
